Chef Ari did his magic with this menu, for the opening dinner for the Healdsburg Food & Wine Festival at the magnificent Verité Vineyards. The first course was a Yellowfin Tuna Crudo, which was followed by a second course of Escargot Arancini. The highlight was the housemade Ricotta & Polenta Stuffed Girela with Braised Snake River Farms Zabouton. The evening ended with a Cheese Course of local produce and artisan cheeses.
